Olive oil made from the fruit of the wild growing acebuche trees. A fruity and well balanced oil with the scent of mature olives, very smooth with hints of almond and fig.
The acebuche is the forefather of all the cultivated olive trees that are planted today and these uncultivated trees grow wild in the mountainous protected parks of the Sierra de Lijar. The fruit of this tree is much smaller than the fruit of cultivated olive trees and the harvest much more difficult. Lorenzo harvests them between the months of November and March and believes that the oils` health benefits far outweigh those of the oils made from modern cultivars. We are waiting for the lab results from various Spanish universities and will publish these on this site once they are in.
