The sea salt from Manoli is unprocessed and has nothing added. The debate about the health benefits of sea salt over processed table salt goes on and on, but the truth is that unprocessed sea salt contains trace elements which have been removed from table salts and contain no additives whatsoever whereas iodine and anti caking agents have been added to the mass of table salts on the market.

Flor de Sal is a hand-harvested sea salt collected by workers who scrape only the top layer of salt before it sinks to the bottom of large salt pans. Due to its relative scarcity and its labour intensive production, Flor De Sal (flower of salt / fleur de sel) is one of the more expensive salts. Flor de Sal is unique in its composition as it contains less sodium and is richer in calcium, iron, fluorine, magnesium and iodine. This makes it very beneficial to our health by maintaining our bodys' natural balance.
The flavoured sea salts made by Manoli are made using Fleur de Sal with natural flavourings and ingredients. There are more than 20 flavoured salts but my favorites are with orange peel, rose petals and mint.

Manolis father started working at the salt flats of Isla Cristina in 1955 when there were over 10 small producers of salt. Now his daughter, Manoli, and grandson run this small family business, now the only one left open on Isla Cristina.
Like all our producers Manoli inspires any one who comes to visit with her enthusiasm for her business and the reserve that is Isla Cristina. Isla Cristina remains one of the most important fishing ports in Huelva province and is a popular summer holiday resort, particularly with the Spaniards themselves. Sevillanos flock to the area in July and August, much of the attraction being the kilometers of beautiful beaches.
Manoli produces salts of the highest quality and in various forms from Fleur de Sal and salt flakes to some beautifully flavoured salts, she has also introduced me to some of the best tapas bars i have ever been to.
